| 24 asparagus spears
3 Tbsp. butter
6 thin slices of prosciutto
1 teasp lemon juice
1/2 C. bread crumbs
1/3 C. parmesan cheese, freshly grated
Trim the asparagus spears down to 6-7 inches.
Bring a large pot of water to a boil, add the aspoaragus
spears, boil for 2
minutes and drain well.
Butter a baking dish that |
is large enough to hold the asparagus. Wrap
1
slice of prosciutto around 4 spears and place them in
the dish. Repeat until
all the asparagus have been wrapped with prosciutto. Sprinkle
them with
lemon juice and salt. Dust the spears with Parmesan cheese
and breadcrumbs.
Dot with the butter.
Bake in an oven at 350 degrees for 10 minutes. Set the
pan under the broiler
for about 3 minutes. Remove and serve immediately.
