Summertime is here and the pickling cucumbers are in.
Check out this very simple recipe.
3 lb pickling cucumbers
1 gallon water
½ cup apple cider vinegar
2/3 cup salt
2/3 cup kosher salt
1 tbsp coriander
1 tbsp black pepper corns
1 tbsp mustard seed
1 head garlic, peeled and crushed
2 fresh bay leaves or 6 dry bay leaves
1 bunch fresh dill

MISE EN PLACE: Roast the coriander, mustard
seed and pepper corns in a dry pan until fragrant. Set aside.
Rinse Cucumbers in cold water and set aside.
COOOKING: Add all ingredients to a pot (except cucumbers
and dill) and bring to a boil. Pour liquid over the cucumbers,
top with whole dill and allow to cool. Place in refrigerator
and enjoy.
