Here’s
a way of preserving cherries that not many people may
be aware of. However, they make for a
great salad or accouterment to a charcuterie or cheese
platter. 1 lb cherries, plump and sweet
¼ cup sugar
¼ cup salt
1 tbsp balsamic vinegar
1 tbsp apple cider vinegar
1 cinnamon stick
2 ea clove
1 fresh bay leaf, or 3 dry
1 small red onion, chiffonade
1 tsp chili flake
1 qt water

MISE
EN PLACE: It’s up to you. You may
wish to pit the cherries or not
COOOKING: Add all ingredients to a pot (except cherries)
and bring to a boil. Add the brine liquid to the cherries
and set aside until room temperature. Place in refrigerator
and enjoy for months.
