This is a very simple side dish, or picnic
dish. The Yukon Gold is a very flavorful spud, but the reds
and whites are all fresh crop California grown and are perfect
for this.
Steam or boil the potatoes with the peels intact and slice
them in big chucks or you'll end up with mashed potatoes
after you are finished stirring in the other ingredients.
Ingredients
* 3 lbs Yukon Gold potatoes
* 1 chopped red onion
* 1/4 cup balsamic vinegar
* 1/4 cup olive oil
* 1/2 cup chopped Italian parsley
* salt to taste

Wash the spuds but do not peel. Steam or boil
them until tender, about 30 minutes. Chop into big cubes
and add all other ingredients.
Stir up well in a mixing bowl and serve hot or cold. This
dish tastes even mo' better when made a day (preferably two!)
ahead of time. Just make sure it is moist enough at serving
time.... And you are right. This is minus mayo and for good
reason, it doesn't need any! |
