Sweet Potato Souffle
9x13 casserole dish, well buttered

350° oven Preheated

7-8 sweet potatoes, chopped in large chunks.
2 huge onions diced
1 stick butter
½ - ¾ cup milk divided
4 eggs
Salt & pepper

Boil sweet potatoes in pot of water with skins on for 20-25 minutes.


When done remove, peel and discard

Sauté´ onions with butter in large skillet on low heat with lid on.
Mix together with potatoes.

Process half the mixture at a time in food processor while adding ½
the milk to each batch. Mixture should look quite thick. Blend in the eggs,
salt and pepper to taste.

Pour into casserole dish and bake for 45 minutes
